Addendum: Gingerbread ...
Here is a postscript to the now finished pear gingerbread :
Man, those things make a really complete. After hours of rest and peace, which had got the dough, the mass was tough and sticky (especially because of the marzipan, I guess) and could not be as indicated on the Oplaten "pass", but had to be on it kneaded with violence.
